Grythyttans Gästgivaregårds´s tip

There is perhaps no better way to enjoy Grythyttan Hjortron than with another locally produced delicacy, Bredsjö Blå (blue cheese)! This highly appreciated green mould cheese is made from sheep's milk and can be compared to Roquefort. It is creamy, rich in flavour and agreeably strong. The cheese and the wine are both fine examples of the Swedish devotion to culinary excellence. Together, the combination is a pleasure that simply must be experienced… again and again!

Hennickehammars Herrgård´s tip

We recommend Grythyttan Hjortron with a dessert of poached pear with chocolate mousse, served alongside a slice of almond and nut pie. This recipe can be found in the book Med doft av hjortron – visionärer och desserter .

Loka Brunn´s tip

We serve Grythyttan Hjortron with our rosehip parfait and plum compote. The sweetness and fruitiness of the dessert provide a perfect balance for the wine's semi-sweet character and fruity acidity. This recipe can be found in the book Med doft av hjortron – visionärer och desserter .

To Cloudberry Golden we recommend our chocolade mousse with warm cloudberries and chilisyrup:

Mousse
1,5 dl milk
1/2 red chili
200 g milk chocolate
100 g dark chocolate
450 g whipped cream

Chop the chili and boil it with the milk. Strain off the chili.
Stir the chocolate into the hot milk and let it melt. The paste shall be smooth and shiny.
Warm the chocolate paste in the light whipped cream. Stir very carefuly.

Chili syrup
1/2 hacked red chili
10 g peach balsam vinegar
90 g white syrup
1 tsp vanilla sugar
1/3 dl Grythyttan Hjortron

Curl this syrup over the mousse and on the plate just before it is served.

Mix cloudberries with sugar water and warm it up. Serve it with the mousse.

Sikfors Herrgårds tip

We offer Grythyttan Hjortron with our Bredsjö Pie, which we serve with preserved, uncooked lingonberries and pickled chantarelles. Grythyttan Hjortron is also outstanding when served with fattiga riddare (a Swedish version of french toast) topped with ice cream and raspberry cream. Stadshuskällarens tip

Grythyttan Hjortron is an exceptional dessert wine, especially when served with fruit desserts that have a fresh acidity. Additionally, the wine nicely complements dessert cheeses such as green mould cheese. Yet another exciting combination is to enjoy Grythyttan Hjortron with tangy fish dishes: the pleasant acidity of the fish harmonizes very well with the sweetness of the wine.
